Stuffed Heart

So I had the heart from my fawn and decided to do a real simple stuffing of just wild Turkey sausage. Cut out the center from the top, removed all the valves and nerves. Stuffed it and baked it to try and keep all the juice in. What surprised me was the heart was still red and juicy, but the sausage was pretty dry :scratch: . Baked it at 300 for an hour. Sliced it up and enjoyed with blue cheese dressing, old Bay hot sauce and a little BBQ. Overall would do it again, but maybe a few drops of EVOO in the cavity for moisture.

Looks great. I was wanting some heart but my 35 Whelen did quite the number on the doe I shot on Saturday.

I had to cut the top part off of mine due to the bullet smoking it

I then sliced it up and pan fried it.


Yours looks good. I’ll try that next time!

Looks good. I tried heart this time for the first. It was good. I rolled it in flour and put in skillet

I haven't had heart in forever.. It was good.. That looks great

Seems every kill I've been apart of the shooter always looks at one of the other guys or me when he pulls it out and says you want the heart and proceeds to give a lesson how to cook and how good it is.. Everyone says no and he tosses if it in the pile.. :scratch:

That's my theory. If it comes out in the gut pile it stays in the gut pile!

Comes from the Thoracic cavity, not the abdominal cavity. North of the Diaphragm is all good ! :thumbup:

The only thing I'm eating that I've got to reach inside for is a tenderloin. :)
I've eaten elk heart. The taste is okay but the texture is terrible in my opinion. I've even less interest in the liver. I have packed both out to folks that do like it.

Truth be told. When I used to deer hunt I had to dig through the gut pile for both the liver and the heart. My father in law was nuts over them. He was always grateful to receive them.
So yes I've zip locked a bunch of both, I never could get myself to eat it, though.

Yeah this is probably one of those cases where if I didn't have something nice to say, I should keep my thoughts to myself.

It may be one of those things if I just didn't know what it was, except liver, you can't hide liver. 😃. I could eat the stuffing though.

Liver lol That stuffs deceiving fries with a heaping portion of onions and mushrooms, looks and smells incredible.. Can't be all bad, looks better than steak, one bite.🤮

heart is my favorite "cut" of meat from an animal,,, I usually just slice, season, and sear in butter but will have to try a stuffed heart one of these days,,
