To Pollock or Not to Pollock, That is the Question!!

I didn’t have to “Buy Me A Boat” to go “Fishing In The Dark” down at the “The Fishing Hole”
or even “Bait A Hook” & wasn’t “Just Fishing” for supper tonight. All I had to do was thaw
a couple of pieces of fish & I was ready to start grillin’!!

Everything turned out tasty but the fillets were pretty thin & tough to keep in 1 piece when
turning. Next time I may just cook on 1 side & not turn unless anyone has suggestions.

I didn't realize they were so skinny. I'll be looking for 1 of those flat
baskets you can flip.

Mahi & tuna steaks are usually pretty thick & hold together well.

Never had tuna steaks, but ate a lot of Mahi in the Keys back in the day.

One of those fish baskets works very well on the grill. I typically have at least 20lbs of tuna steaks (and mahi) in the freezer at all times. Blackened tuna with some Wasabi to dip it in is one of my favorites!

I checked online at Wally World for a basket. They wanted $12.36 plus $11.71 delivery with no store pick-up.
Ain't no way I'm paying almost as much for shipping as for the basket costs!!

The baskets work, but are a real pain to clean properly. When I'm grilling small filets from panfish/crappie or any thin filets I make a foil cooking pan by folding the sides (double the foil and overlap the wraps) and doing a fold crimp (kinda tricky) on the corners. I put a little olive oil in the foil pan to cover the bottom and usually place my filets w/ a little seasoning (sometimes I sprinkle on salmon rub or a little of my BBQ rub), place on the grill w/ very little heat under the fish and smoke for @ 10-12 minutes. I only cook w/ Kingsford charcoal which I place w/ the smoking wood on top at the end of my grill w/ only a few briquets actually under the fish. You don't need to turn the fish, it will smoke/cook thoroughly. I keep a piece of cut plywood to slide the foil pan onto since the bottom of the foil will have grease from the grill on the bottom. Use a spatula to remove the fish and simply throw away the foil pan. I cooked redear (shellcracker) filets this way last night to make fish taco/burritos. YUM

I found 1 at Family, Farm & Home. My niece is a manager there so I'll get her to check
if they have 1 before I go.

I like any fish with just a little drawn butter & a little bit of lemon juice.

I may try your foil idea next time I grill pollock. Thx.
