Wild Turkey Sausage Breakfast Scramble

I think I have posted this recipe before without pics but am too lazy to try to find it.
I did a couple of things differently than I did in the original recipe. I added hash
brown potatoes & also added the eggs. Last time I took the eggs to The Roost &
added them when we cooked the scramble. This time, I cooked them in at home &
will see how they do frozen. Makes it easier at camp.

Ingredients

1 pound of homemade wild turkey sausage
1 large bell pepper, chopped
1 bundle of green onions with most of the green removed, chopped
6 large button mushrooms, chopped
Cheddar cheese or whatever cheese floats your boat, as much as you want
Eggs, as many as needed
Oil, just enough to keep the sausage & veggies from burning/sticking
Hash Browns or other potatoes optional.

Directions

Heat a frying pan & add oil to coat the bottom.
Fry the turkey until there is no pink.
Put turkey in a separate container.
Add oil.
Fry the veggies until tender.
Add the eggs & cheese, stirring until the eggs are cooked.

looks good but the green peppers gives me gas...

You can replace the green peppers with red, yellow, or chocolate (brown) peppers.

I love heat as long as it doesn't kill the flavor! :angryfire: when its just hot, I care less. I love flavor with some kick to it

That really does look good! I love that kind of breakfast stuff. I too would replace the green peppers with red and yellow as me and greens don’t get along well!
This is right up my alley and do a variation of it on our annual fishing trip.

Thx all. The green bell pepper is the only pepper that does not create capsicum which is what brings the heat.

The colored versions of a green bell pepper are the same as a green but more ripe. The greens are the babies
of the bell pepper family. The colored peppers actually have higher amounts of vitamin C & beta-carotene.
The older the pepper, the more mellow the taste,

Thus ends the lesson for today.
