Squirrel Alfredo

It was too hot to get out into the woods this morning so I decided to cook up a new recipe, Squirrel Alfredo. I couldn’t find any egg noodles so the bowties will have to do. This will be going to Gobbler’s Roost in mid-October for fall turkey season.

It turned out pretty well & was an early supper tonight.



Ingredients

3 – 4 squirrels
1 large onion, chopped
1 green pepper, chopped
1 stalk celery, chopped
2 cans mushrooms
1 quart Alfredo sauce
1 can cream of mushroom soup
1/2 soup can milk
cooked egg noodles

Instructions

NOTE: I soak the squirrels for a day or so in salt water in the fridge, then pressure
cook & debone. I would add the squirrel in Step 7.

1. Soak the squirrels in salt water overnight. Remove, rinse and drain.
2. Place the squirrels, onion, green pepper and celery in a large pot. Cover with water and boil until tender and meat starts to fall off the bones.
3. Remove the squirrels from the broth and allow too cool.
4. Remove the onion, pepper and celery from broth. Discard broth.
5. Remove meat from the bones.
6. In a pot, add the meat, veggies from broth and the rest of the ingredients except the noodles.
7. Cook over medium heat until heated through. Stir occasionally.
8. Serve over the cooked noodles.

Looks good. I had skwerl gumbo years ago that was delicious

Thx. I have a lot of squirrel recipes & all have been good except 1 & it was only fair,

Lookin' good! I prefer sq. to chicken most ways we cook it.

Looks good. I really like squirrel gravey and homemade biscuits. Even makes a good breakfast. We do the same thing with turkey legs, wings and backs. Tastes very similar.
