Just finished our favorite turkey treat. Simple and delicious. Cut turkey breast into bitsized nuggets or strips. Soak in milk for several hours. Shake in a large ziplock bag with House Autry Chicken Breader Mix until coated. Bring oil to 350 degrees and fry to golden brown. Drain in paper towel lined pan. They're great by themselves or dip in ranch dressing or barbecue sauce.

Turkey nuggets are one of our favorites to. We soak ours in milk and egg, then batter with pancake mix.

Nuggets are the A Number One around here. Breast doesn't always last long enough for any to go in the freezer. Don't know why y'all soak, though. White pepper gravy over rice on the side. If I'm lucky there's some left over for a sammich later.

The other way I do if I get to killing too many is pound out a section of breast flat and let sit with Italian seasoning in the fridge for a little while. Grill to just barely done on the grill and out it on a sub roll however you like it.

I like the dark meat of the bird in enchiladas. Truth is, though, that red Mexican sauce will make pretty much anything taste good.

I also soak in buttermilk. Buttermilk contains lactic acid which helps to tenderize, retain moisture, and allows added flavors to permeate throughout the meat. It also pulls out whatever blood might be in the meat. After soaking overnight, the b-milk always has a pink tinge.

As far as coatings, I like a mild-to-medium cajon mix.

My buddy does this. Hits it with a meat hammer and he says it's even better tender. Might have to try it

We do this as well , ranch then Tony's then Drakes fry mix.
The only thing I don't like about this is the cook doesn't get very many cause somebody
stands around grabbing them as soon as they come off ,haha.

Never saw the need to "mask" the taste of wild game by soaking in milk, etc. Picked up simple way to deep fry fish and game, especially wild turkey. First of all, I cut against the grain half inch thick rather than with the grain of the breast. Whisk in a half cup of flour into a cold beer or cold soda water and adjust mix until between watery and pancake batter thick. Dredge meat in it and drop into peanut oil heated to 375 F. Turn once until browned. The CO2 will expand, making the batter puffy almost like a tempura. Use cookie sheet wire grates to cool fish, salt and pepper. Don't put on paper towels or newspaper. The cookie sheet grates allow the excess grease to drain off and the meat doesn't get soggy. Mix a spicy mustard with honey for a dipping sauce. Works for me. Gil

Around here we make a batter of 50/50 eggs, honey and some garlic salt ; dip in the batter then into a bag of flour with gernerous salt&pepper with some more garlic salt. Then deep fry.

God Bless, Louis

The wife and I had our first turkey nuggets tonight, very very tasty. We did the buttermilk soak but skipped the egg dip part and rolled them in House Autry seasoned with Tony's Cajun seasoning. First time we have done that and we have half the breast left from the big bird last spring so we will do it next week. We will do pretty much the same thing but will do the egg dip and roll them in spiced up instant potato flakes. That is what we use on walleye and perch fillets and it gives them a real good taste. April 15, 2019 I hope to get another one in the freezer.

I always use a meat hammer, it will make any shot that is in the meat pop out.
