duck breast and jalapenos

had some fresh jalapenos from the garden so decided to try something new (to me),,,,,

sliced some duck breast against the grain into 1/2 so thick slices,,,,,

sliced three jalapenos thin the same way,,,,,you want enough so you have a slice or three with each bite of meat,,,,,,,,,

melted some left over bacon grease (you now know this recipe is automatically DELICIOUS!!),,,,,

sauté the jalapenos for a few minutes to open them up and infuse some additional flavor into the grease,,,,,,,

season the diuck breast with Cracker Boy and some ground black pepper,,,,,,,add to pan,,,,,,,,

sauté quick on one side,,,,turn,,,,,sauté the other,,,,,shooting for medium rare to medium,,,,,so have the grease hot but not smoking,,,,,,

served up with some steamed broccoli and tomatoes,,,,,and iced down sun tea,,,,,,,,,

Now there's some great eatin' & sure wish I had that recipe back when I was a duck slayer :thumbup:
