GEORGE’S VENISON CHILI

This chili is of my own design & will be going to Gobblers Roost in NY for spring turkey camp. I pretty much stick with the basic ingredients but may add something here & there (carrots this time) & I almost never stick with the listed amounts. I have found that chili gets better as it ages so it stays on the stove for 2-3 days with numerous samplings to determine if I need to add anything. The 1 thing that I wish I had more of for this batch is venison. I ran out too soon. Now it’s on to the squirrel dishes.

For me, the test for chili is how soon you start sweating & your noise starts running as well as how much fire is in your mouth, which usually occurs between 1 & 2 bowls. This is a GREAT batch of chili as I started sweating & running about ½ way through the 1st bowl. The best part was, I could taste the spices with just a little heat in my mouth & no afterburn.



GEORGE’S VENISON CHILI

INGREDIENTS

2 30 Ounce cans of Caliente Style Kidney beans
1 30 Ounce can of Kidney Beans
1 30 Ounce can of Stewed Tomatoes
1 8 Ounce can of Tomato Paste
2 Pounds venison Stew Meat
1 Large Bell Pepper Chopped
1 Sweet Onion Chopped
3-4 Celery Stalks Chopped (optional)
3-4 Jalapeño Peppers Chopped
1 Garlic Glove Chopped
2 Tablespoons Brown Sugar
1 12 Ounce bottle Chili Sauce
1 Pound Sharp Cheddar Cheese Shredded
1 Pound chopped mushrooms
Chili Powder to taste
Cayenne Pepper to taste

DIRECTIONS

Brown meat in Olive Oil and drain.

Combine and brown bell pepper, onion, celery, and garlic.

Place beans, browned veggies, tomato sauce, tomato paste, jalapeños, brown sugar, meat and chili sauce in a 6 quart or larger crock pot or covered pot and simmer for several hours. Add Chili Powder and Cayenne Pepper to taste. Stir occasionally.

Chili is ready after about 4 hours. It is at its best after at least24 hours.

Any meat may be substituted for the venison, the leaner, the better.

No rodent meat in my chili, deer or elk is fine but no rodent.

Beans in chili? You clearly aren't from Texas. Sinful.
I won't even discuss carrots in chili.

George don't let these guys bother you. It takes innovators to come up with new and better recipes for our deer meat. What if the guy in Texas didn't take the beans out of his chili? what if everyones Nanna didn't try different ways to make chili? :lol: :lol:

Any how I love the way you post cooking recipes. You should have your own TV show.

Doug, I don't let the small stuff bother me & the naysayers are all small stuff. I cook what & how I like & have never had any complaints from anyone at deer or turkey camps. The fact that the pot always ends up empty is proof enough for me.

I've always been visual & started taking pics with a little square 126 box camera that I won for selling greeting cards for the Elmira (NY) card company in the mid-60s. I think it helps for others to see the process. My own TV show?? I don't think any company could afford the cost of constant camera replacement if ya know what I'm saying.

Are the jalapenos left whole? Looks good. Squirrel recipies are a big hit down here in southern o

I slice the jalapenos, remove the top & fibrous parts & de-seed. Then I chopped them up into small pieces. The flavor & heat gets distributed throughout the chili more evenly. The posted recipe is wrong. I'll fix it.

A lot of people like fried squirrel but I can' eat it. When we had our camps in WV, we would supply bushies to a couple of bachelor brothers who let us put a silver stream on their property. The 1 brother would always fry the bushies & they just weren't very good but we forced ourselves to eat so as not to insult them. Turned me off fried squirrels for good. Anyone who hasn't tried squirrels just doesn't know what they're missing.
