Homemade Baked Beans

About 3 years ago, Soiltester sent me some pinto beans, red beans, & a jug of Michigan Maple Syrup. (Thanks again, Charlie.) My 1st effort was homemade baked beans. Since I was feeding 11 people, I adjusted the recipe by doubling everything. I also added the bacon & ham.

Ingredients

½ Pound Bacon
½ Pound Chopped Ham
2 Pounds Dried Red Beans
1 Cup water
¾ cup packed brown sugar
2 small onions chopped
3 tablespoons ketchup or BBQ Sauce
3 tablespoons molasses or maple syrup
1 table spoon vinegar
1 tablespoon mustard
1 teaspoon salt
1 teaspoon garlic powder
3 tablespoons baking soda

Directions

1. Wash Beans & remove any that are shriveled as well as any stones.

2. Place the beans in a large container add the baking soda as you cover the beans with water. The baking soda may help reduce gas. (Learned this from my Sis’s MIL. Verified & it’s true.)

3. Soak the beans over night.

4. Drain & rinse beans.

5. Preheat oven to 350 degrees. Grease a 2 ½ quart baking dish.

6. Place bacon in a large skillet and cook over medium-high heat until crisp, about 10 minutes; drain and cool on paper towels. Crumble bacon once cooled. I chopped the bacon before I fried it.

7. Mix bacon, ham, beans, water, brown sugar, onions, BBQ Sauce, maple syrup, vinegar, mustard, salt, and garlic powder together in the prepared baking dish. Cover dish with aluminum foil or lid if the dish has one.

8. Bake in preheated oven until bubbling, 45 minutes.

After adding more BBQ Sauce, ketchup, & baking for an additional 25 minutes, the texture of the baked beans was a lot better & the taste actually improved.

Thx all. On the 20th, my newest great niece is being baptized & I'm having the family over for our annual BBQ baby-back rib-fest. I plan on making these beans & trying a new tator salad recipe. I also need to re-frame my horseshoe pits & add more sand. We always make it a day with shoe pitching & some gun shooting. Looking forward to it.

BTW, I have ham & bean as well as ham, bean, & cabbage recipes I'll be posting. May have to make a double batch of each to take to fall turkey camp!!

Sounds and looks great! One question though...You list baking powder in the ingredients and mention adding baking soda in the instructions. Which one is it?
