We had some last week also. I deep fried nuggets my typical way (soak in buttermilk a couple hours, then roll in seasoned flour) and tried Doc's method for buffalo strips from his book (2nd volume), except I didn't coat in flour and used a bottle of buffalo. Both were really good, but the buffalo kept the carbs down

Re: In the kitchen with da assassin
We soak nuggets in milk over night then do the egg wash and flour then pan fry some you can make gravy.
Re: In the kitchen with da assassin
We go straight from buttermilk to flour, no egg wash. I believe the buttermilk helps tenderize.

We did turkey breast nuggets “Popeye’s” style last week. Half buttermilk half Louisiana hot sauce. Soak overnight. Roll in flour seasoned with “slap ya mama” deep fry. Red beans and rice to go with it.

I think I've got one more set of breast halves left that I'll cook for some friends, but after that I'm down to mule deer and a few pheasants. The freezer is depressing when I don't kill an elk. We did find about 8 packages of elk burger last week that we thought was long gone.....SCORE!!
Looking forward to adding some more turkeys to the freezer in April and May.
