The is a meat shop close to here that makes deer and elk polish sausage with jalapenos and cheddar cheese in it
and yes it is real good, $3.75 a pound which is cheap to me considering it isn't full of chicken, turkey and all the grease in the store bought stuff.

Looks better than mine! I just made 40 lbs and used chipotle peppers. The taste is absolutely great, but the texture is crumbly. Not sure what to do differently, but I'd bet the smoker is a much better way to cook than in the oven like I did it....

Make sure you use a cure. It binds the meat together so it isnt crumbly. I use the High Mountain kits. I dried these an hour in the smoker on low heat with no smoke. Then turn the up to about 150 -160 for however long it takes to burn up a full pan of chips. I then finished in the oven at 200 until the internal temp of the sausage was at 160.

Great eatin' there!!! :thumbup:

I don't miss the end of season days in MI with my buddies and we did over 200#'s of duck & goose different flavored smoked summer sausage, and I had to watch the smoker all day :joker:

I just about puked when i saw that,make literally tons of it where i work.
I make all kinds of deer goodies for myself,i mean venison for all flatlanders,also i add lots of high temp cheese to mine!!The cure is very,very important.Down here in Pa. we call it bologna.Looks like ya had the right hand pressure on the stuffing horn,looks good!!

I think Enterprise became Chop-Rite at some point. Same design, still made, and you can still buy parts. Good find to get one at a yard sale. Those are built like tanks and expensive.

nice!!

I love making summer sausage,,,,,,,,sadly not enough deer for me this year (didn't hunt much do to slight health issue) but hope to make up for it next year!
