It ain't bad. A tad dry ,but good. My wife has stomach issues so I watch the spice.

Yes. 6 1/2 lbs. deer meat and 3 1/2 lbs. of fatty pork roast.

And it's still dry?? Maybe your cooking it too long? Have you tried putting a container of liquid (beer, wine, water) in the smoker/oven while cooking?

I use apple juice for moisture when smoking fish. I Don't use liquid with meat.I figger it will be fine with some sauteed peppers,onion and spicy mustard.
